Cajun Salmon Nicoise Salad

I love to cook for my family, every night we sit down together around the dinner table. Sometimes it’s just the 3 of us as Mr.S works a lot but no matter what we always eat as a family.
It’s important to me that we can sit down together and talk about our day and enjoy some food together.

Another thing that is important to me, is that we have a healthy and balanced diet over the course of the week. This isn’t to say that we don’t like to indulge at times and treat ourselves to a more hearty meal or sweet treat.
But the majority of the time I make a very conscious effort to make sure we eat a nutritionally balanced diet. I want my children to grow up with healthy attitude towards food.
Almost everything we eat is cooked from scratch (I can’t deny we don’t have emergency fish fingers looming in the freezer).

So for lunch today I decided to make a slight variation of a salmon nicoise salad.

To make this you will need the following;

Salmon fillets (Amount depends on how many you are cooking for, 1 each is a good rule of thumb)
400g New potatoes
Handful of plum tomato’s (any small tomato will do)
200g Green beans
2 Gem lettuce
1/4 Red onion
Drizzle of Olive oil
Drizzle of lemon juice
Teaspoon of butter
Salt and pepper to season
Cajun spice as required.


1 – Place the salmon in some tin foil and splash some lemon juice, pepper and sprinkle over Cajun salmon to suit your taste. Then wrap up and put in the over for 10 minutes at 180 fan assisted oven.

2 -Chop the new potatoes and boil for 10-15 minutes and add the green beans for the last 3-4 minutes.

3 -Chop the lettuce,tomato’s and red onion then place in a bowl and drizzle over roughly a teaspoon amount of olive oil and lemon juice. Season with salt and pepper and stir to coat the salad evenly.

4 – Once the potato’s and green beans have cooked, drain well. Add enough butter to coat the pan and pour the vegetables back into the pan and simmer for 2-3 minutes.

5 – Remove the salmon from the oven and grill for about 5 minutes for a crispier top.

6 – Serve the salad in a bowl, place the salmon on top and serve the potato’s and green beans around the edge.

So my 16 month old could enjoy this too, I served her fish, potato’s, green beans and tomato’s.
